Autumn Picnic and “Skillet Express … Smoked Sausage and Squash”

Also incredibly nostalgic … picnics with charming, wicker picnic baskets with little clasp fasteners, bright, cheer-y interiors, picnic-ware fastened to the lid, and a most delicious meal served “al fresco” tucked within it’s confines.

The setting for our autumn picnic was serene among “the annual cascade of leaves” that lazily drifted down from the canopy above …

And formed a golden frame around our picnic area.

Look how the green and white “hound’s tooth” on the interior of the picnic basket became the perfect background for these bright sunflowers and bittersweet I was getting ready to use in a centerpiece.  I just propped “the whole bunch” in the corner of the picnic basket … and instantly loved the color and casual centerpiece it became for our picnic!

Our picnic meal was equally casual with left-over “Skillet Express … Smoked Sausage and Squash” (recipe below) that we kept warm in a cheer-y red plaid thermos … an easy dessert of 2 crisp, autumn apples … and cups of hot spiced tea.

front basket.jpgThrough the years, I’ve created some easy meals for our family that I call … “Skillet Express Meals.”  Cooking criteria that “must” be met in each of these recipes: it “must” take less than 30 minutes to fix, it “must” be delicious, and it “must” use only 1 skillet to make the recipe, from start to finish.  The first “Skillet Express” recipe I shared on this blog was Autumn Dinner … Smoked Sausage, Spinach and Orzo topped with grated parmesan cheese and today I’m going to share with you …

“Skillet Express … Smoked Sausage and Squash.”

Autumn Tablescape … with a “side” of Provincial France

With beautiful, tangible evidence of autumn in the air and a birthday to celebrate with “la famille” last weekend, I polished the brass candlesticks and started decorating the table.  I always have a general idea of how I want to set my table … if I’ll be using a table runner, a tablecloth, or place mats … which plates, napkins, and cutlery I want to use … and what I’ll be using as a centerpiece, but setting a table and creating a tablescape are two different things.  Sprinkles and touches of  “this and that” are what magically transform a set table into a tablescape.

tablescape 1 The definition of tablescape according to the English Oxford dictionary is … “A decorative arrangement of ornaments or other objects on a tabletop.”  Embellishing Oxford’s definition of tablescape a little further … a tablescape for me  is created by arranging a tabletop in an artful way by using decorative objects … decor … centerpieces … lighting … and color in combination with the items needed in the table setting to create a certain mood or theme.

To begin “building” my tablescape, I chose what colors I wanted.  I envisioned the autumn shades of squatty, Cinderella pumpkins, golden wheat fields, and the colors of the leaves that were beginning to turn different shades outside.   With those colors in mind, I chose a beautiful soft yellow tablecloth with borders edged with harvest bounty, autumn leaves and acorns.  My choice of dinnerware was an elegant, ivory colored Wedgwood china that was rimmed with rich, harvest colors and had a deep cornflower blue border.  A cluster of silk autumn leaves in dusty orange, burgundy, and golden yellow became my centerpiece mixed with faux clusters of deep purple grapes, and fresh sprigs of burgundy Loropetalum (Chinese Fringe Flower) that I tucked in among the leaves from bushes Richard had just trimmed outside. When creating a tablescape, it’s important to imagine what idea, mood, or theme you are trying to convey.  In my mind I pictured a French villa on a warm autumn afternoon that overlooked a valley of the French countryside.  As I visualized what I wanted my table to look like, I knew the French provincial figurines in my kitchen hutch. (click here to see) would look perfect on the table and voilá! … with the placement of Pierre and Belle, my table was suddenly transformed into the beginnings of a tablescape!

Then, the fun really began as I begin to sprinkle in a little “magic” … “this and that” … “the jewelry” to make our table gleam: brass and crystal candlesticks were placed, tall against my autumn foliage and copper and gold votive cups were tucked among the foliage and grape clusters for sparkle.

Between the Months of June and August … at the Lake

 It’s hard to believe it’s the end of August and our golden, lazy, summer days are waning.  Another summer filled with happy laughter, cannonball splashes. bobbing rafts, sunset boat rides, locust droning and warm breezes blowing against cooled bodies in wet bathing suits.

The Last of Autumn … “Something Told the Wild Geese”

As I was taking a picture of this glorious Ash Tree, I recognized a sound above me, like the whoosh of a wave approaching the shore.  I hurriedly snapped the picture and was thrilled when I saw I had “captured” these pelicans in flight!  As I stood there and marveled, phone still poised and ready, 3 more “squadron” of pelicans flew over!  I felt like I had just been presented with a gift … as indeed, I had! (:  NOTE: A group of pelicans have many collective names … BRIEF, POD, POUCH, SCOOP, and SQUADRON … are all names for a group of pelicans.

Something Told the Wild Geese

Something told the wild geese

It was time to go,

Though the fields lay golden

Something whispered, “snow.”

Leaves were green and stirring,

Berries, luster-glossed,

All the sagging orchards

Golden leaves on this young Eastern Redbud and more golden leaves on our Ash tree down by the lake contrast beautifully with the red bark and the red roof on our boat dock and stand out brilliantly against a backdrop of green.

Al Fresco Dining in Autumn … Easy Caramel Toffee Cream Cheese Dessert Dip by Trenda

Autumn, sunshine and al fresco dining are, like the song says … “a few of my favorite things!”  Yesterday was a beautiful autumn day with a light breeze that “ruffled” the lake and teasingly tugged at the chimes taunting us for staying inside.  By noon, we happily “gave in” and I made lunch and served it “al fresco” on the deck.

Caramel & Toffee Cream Cheese Dessert Dip is delicious and takes longer to say, than it does to fix!  You’ll love how easy it is to “assemble” and the autumn flavors are perfect for afternoons snacks or unexpected guests! (:

Caramel & Toffee Cream Cheese Dessert Dip

Ingredients:

  • 1 block (8oz) cream cheese
  • Caramel Ice Cream Topping
  • Toffee bits or chocolate covered toffee bits
  • Apples

Instructions:

  1. Unwrap and place entire block of cream cheese onto a plate.
  2. Spoon enough caramel ice cream topping over the cream cheese to cover and  “pool” around the base of the cream cheese.
  3. Sprinkle toffee bits liberally over the caramel topping.
  4. Slice apples, brush sides with lime or lemon juice to prevent browning.
  5. Arrange apples around dessert dip.

The Gentle Caress of Autumn Comes to the Cottage ………………… by Trenda

Autumn comes gently in the South with the days slowly becoming cooler and just the tips of burnished leaves can be seen shining in the golden sunlight.

Our Beauty Berry Bush is laden with brightly colored berries in a gorgeous shade of purple … autumn delicacies for our “feathered friends.”

A little birdhouse tucked among the leaves and blooms of an Encore Azalea that is putting on it’s “final act” with brilliant autumn blooms.  A flying squirrel, while house-hunting, decided this little house was going to be his new home with it’s green roof, lichen covered walls, and view of the lake.  Without waiting for “a showing” he gained entry by nibbling his way into the opening and took up residency! (;

From the back deck …

1backyard.png“Whiskers” (a Great Blue Heron) a long time resident at Cottage Green strolls each morning and evening along our retaining wall and dock.  A few evenings ago Richard and I were sitting outside watching Whiskers as he stood poised, watching intently the water below.  Suddenly, we saw his neck straighten as he nimbly struck at a passing fish.  When he straightened back up, he had a 5-6 inch perch, “shis-ka-bobbed” on his beak … “bon appétit! (:

Backyard … Encore Azaleas are performing their second act, re-blooming and brilliant against a backdrop of ferns.

A delightful spot to bathe!  A birdbath surrounded by Holly, Dwarf Nandina and a Japanese Maple …

In the front yard … perfectly named for it’s blooming time and “firecracker red” blooms our ‘Firecracker’ Crepe Myrtle (Lagerstromia) blooms each year in our front yard around the 4th of July.

Strutting across our driveway is a new resident at Cottage Green … a white crane I named “Sassy Pants!” (:  He visited our front yard one day and decided he likes perching on our front deck and dining on worms he finds between our brick pavers!

The 4th of July!!! ~ by Trenda

The 4th of July … America’s biggest, grandest party of the year!  

Around our town … a giant ferris wheel!

And at Cottage Green … tablescapes, favors, treats, and decorations for our 4th of July celebration “from the dawn’s early light” … until “the twilight’s last gleaming!”

A simple tablescape apropos for July 4th on the Lake!  A metal rowboat filled with all “accouterments” needed for lakeside meals and desserts … both “stars” and “stripes” plates in assorted sizes, plastic cutlery, napkins, straws, with miniature flags and sprays of  “bling!” (:

boat tablescape background.pngOutside, the table is covered in a quilted tablecloth and a “God Bless America” centerpiece of fireworks and stars.

final 2.pngRed, White, and Blue baskets await hamburgers, a cluster of red grapes and brownies.  Striped, paper bowls are perfect for individual portions of potato salad and make clean up, easy.  A blue wired basket holds cups, plates, cutlery, and patriotic straws.outdoor table setting.png

Scalloped-edged bandana boxes (I bought mine at Hobby Lobby) are filled with “fun things” for the 4th of July weekend … fans, balloons, bubbles, “USA” and star colored beads, sunglasses, pencils, flag pins, and Chinese yo-yo’s!

Hope you had a wonderful weekend and just enjoyed being FREE … free to gather in your own home or backyard with family and friends … free to pray over your hot dogs, hamburgers, watermelon, and homemade ice cream … freedom to “hoot” and holler” as you exclaim over beautiful fireworks, in the sky.

After looking at a display of  flags from all over the world, our 8 year old grand daughter, in her endearing and profound way, said … “Grandma, don’t you think we have the prettiest flag of ALL?”  “I certainly do!”  I quickly agreed.  Then she solemnly said … “Grandma, wouldn’t it be so sad if we ever saw another flag flying over our country,  instead of our flag?”  Oh my, my heart felt sick as I pondered her question and tried to imagine seeing another flag other than our “STARS and STRIPES forever” … being flown over our country!  With a grateful heart, I want to thank all our military and their families, throughout the ages, for the sacrifices they have made and given for our freedom so … “the prettiest flag of ALL” continues to fly over our great nation. “GOD BLESS AMERICA, LAND THAT I LOVE.” <3

Summer Boat Ride … plus Sweet & Salty Trail Mix Recipe

At the top of our list of “summer chores” is getting our pontoon boat “sea worthy” and all cleaned up for the boating season.  Richard got out the power washer and surprisingly, only found 1 duck egg laying, like a prize on top of our boat cover! (:  After the cushions were sparkling and everything was wiped down, we loaded up the boat and headed “over the bounding main.” Climb aboard, put on your sunglasses and come with us!  We’ve got our Captain, First Mate (our darling grand daughter!) and myself … and we’ve got room for plenty more!  I’ve even packed a summer-y snack!  Let the wind blow through your hair and sweep your worries away for a little while!

 

 First stop … a protected cove where we can enjoy our snacks while “bobbing” gently on the water.  The warmth of the sun and the rocking motion of the boat dissuades any thoughts of worry!

Look at my “new” picnic hamper!  I love it and found at one of our favorite antique shops!  I was thrilled when I saw it just waiting on the shelf for me!  I don’t think it’s ever been used!  It’s loaded with picnic style plates, cutlery, and plastic stemware and the bottom of the picnic basket is an insulated, zippered ice chest!

I just had time to grab some quick “fix-in’s” before heading out to the boat.  A little wicker boat holds seasoned crackers for dipping into a creamy pimiento cheese spread.

 I always love using my favorite wooden “Lake” serving board and it looks perfect for our lakeside picnic with a little oar spreader!

A miniature creel fishing basket is filled with a Sweet & Salty Trail Mix Snack that is easy to “throw” together and is a great energy snack!  I tucked a tartan colored napkin in our little creel, then filled it with trail mix and added a fun scoop!

Sweet & Salty Trail Mix Snack:

  • 1 cup dry roasted peanuts
  • 1 cup sunflower hearts
  • 1 cup raisins
  • 1/4 cup cheese flavored “Whale” or “Fish” crackers (always a cute addition for lakeside snacks!)
  • 1 cup M&M’s

This recipe makes a big batch so I mix all my ingredients together in a large, air-tight container, to help keep it fresh.

Okay, brush the crumbs from your lap, pick the seat you want to “lounge in” and settle back.  We’re taking off for some sight seeing!

We love the rock jetty in front of this house!  The stone wall creates a private swimming area and the sandy beach beyond is strewn with grass covered umbrellas!

Look at this massive labyrinth; it’s a homeowner’s private boat dock and party area!  If you look to the left and up the slight incline, there is another similar structure that is a playground for some lucky kids! (:

The twilight shadows are changing from pinks to deep blues and purple and our flag almost glows in the fading light, as we head home.

Another beautiful sunset on the lake.

Back home, the boat is docked and with picnic hamper and wet towels in hand, we disembark … and watch the beautiful twilight curtain descend upon the lake.  Hope you enjoyed our cruise! (:
